Lemon Blueberry Cake - The Inaugural Post

So…this is the inaugural post on Love to Cook.

I really do love to cook. Next to sewing the kitchen is my happy place. While I love to cook anything, I really love to bake. No matter what I’m doing in the kitchen – as long as it is not scrubbing the floor – I am happy, happy, happy. In my head I have an idea to do my own version of “Julie & Julia” by cooking out of one of my favorite cooks books (top on my list are Paula Deen and Ree Drummond/The Pioneer Woman). We shall see how I can pull that off and what it looks like?

Today I decided to try a fresh cake for this hot, summer day. This recipe was posted by one of the artists that I follow (ok…I guess you can call it stalking!), Margie Romeny-Aslett (fellow lover of all things pink and sparkly – plus she adores the sun as much as I do. What’s not to love!?). Now granted, she is known for her amazing paper arts talents (and yes…if I can take a class from her and she is near where I am, I will travel to be in her class!).

At any rate, she posted this recipe to her IG feed a few weeks back and I immediately knew I wanted to make it. Oh how happy I am that I pulled the trigger and warmed up the oven today! So…worth…it!

Lemon Blueberry Cake


  • 1 Yellow Cake Mix
  • 3 Eggs
  • 1 c. water
  • ½ c. Oil
  • 2 tsp. Lemon Extract
  • 1 tsp. Coconut Extract
  • 1 tsp. Vanilla
  • Juice from 1 Lemon
  • 2 c. Blueberries (fresh or frozen, thawed)

Preheat oven to 350⁰ degrees. Mix together cake mix as directed on the package. Stir in Lemon Extract, Coconut Extract, Vanilla and lemon juice. Gently fold in blueberries (I used frozen in my mix and fresh as garnish…just because). Pour into a greased 9x13 baking dish. Bake 25 minutes at 350⁰ - or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan. Cool completely before frosting.


  • 1 can Cream Cheese Frosting
  • 2 tsp. Lemon Extract

Combine and frost cake. Garnish with blueberries and lemons as you desire.

I’m pondering attempting this with strawberries and vanilla. Hmmm…what other combos would be yummy?
